1 lb. chicken tenderloins, trimmed of tendon thingy
Mexene Chili Powder
Salt/Pepper
1 medium onion, chopped
8-10 large flour tortillas
Cheese Dip (already made)
Hot Sauce or Salsa, if desired
Recipe
Saute chicken pieces, liberally coated on both sides with Mexene.Salt and pepper when it's in the skillet.I use a well-seasoned iron skillet with no grease.Brown chicken on both sides.Remove, cool, and cut in bite-size bits.Lay a tortilla in clean skillet (iron), spread 1/2 tortilla with a couple heaping T. dip.(When my dip got cold it was very thick.)Place chicken pieces over dip, sprinkle with onion.Add hot sauce if using.Fold over tortilla top, cover skillet with lid (or loose foil), one side overlapped to let out all the steam.Brown on one side, turn over and brown.The fat in the cheese soaks through and makes the tortilla crunchy/crisp.
This has made many meals for me this week.Sliced tomatoes or salad on the side is a perfect meal.Can be as hot flavored as you want.

Mexican restaurant style White Queso Dip
1 lb. white American cheese
2 small cans diced green chili w/liquid
1/2-1 cup whipping cream
Simmer in pan until smooth, stirring often, over low heat.Add 1/2 cup cream to start.
I've found white American cheese several places.It's the exact same as yellow, no food color added..
