    Turn oven to 200 degrees. You are going to cook the beef on the stove but you'll warm the tacos in the oven.

    2 lbs ground beef ( I used the very low fat kind so I didn't have any fat to drain out)
    1 tsp salt (I probably used a little less, you won't miss it)
    2 Tbsp Chili powder (use all of this)
    2 Tbsp Paprika (use all of this)
    1 tsp Cumin (I probably used two because I found a recipe that said that cumin was one of the secrets to making the taco flavor so good)
    1 tsp Garlic powder
    1 tsp onion powder
    1/8 tsp cayenne pepper
    8x8 squares of aluminum foil
    Shredded Sharp Cheddar Cheese
    Chopped tomatoes
    Chopped onions
    Shredded lettuce
    Taco sauce of your choice (Hot for me and mild for Sydney)

    Brown ground beef. If you have a lot of grease in the pan, you'll need to drain it. If not, proceed. When beef is done, immediately stir in spices over low heat and stir until blended. Do not add any liquid. Remove from heat.

    Meanwhile, warm soft tortillas in microwave for about 30 to 45 seconds.
    Place one tortilla on each aluminum foil square, top with meat mixture and shredded cheese. Fold up and close, and place in warm oven to melt the cheese on the meat.

    Assemble toppings. After 5 to 10 minutes, remove tacos, place on plates, (I left ours
    in the foil wraps to make them easier to handle) and top with toppings and taco sauce of your choice.

    Another thing I think makes a big difference in this recipe is using the Sharp Cheddar instead of the mild. It adds another flavor dimension. When I had tried to duplicate them before I had used mild and it wasn't as good.
