    Posted by: M_Wolverine ********The heat of this dish is mild/medium and is pretty much kid friendly, so if you like a little more spice in your food, use one of the
    optional "kicker uppers" below. Add it when simmering the first time. This is a great side dish with tacos, burritos or tequila-lime chicken, or it's good all on it's own as a main dish.

    List of Ingredients




    1 lb. extra lean ground beef
    1 green pepper, diced
    1 lg. onion, diced
    1 10.5 oz. can RO*TEL Tomatoes with Green Chilies
    5 cups beef broth
    1 Tbs. garlic powder
    1 Tbs. ground cumin
    2 cups long grain white rice, uncooked
    1 14.5 oz. can whole kernel corn, drained

    Options for more heat:
    1-2 Tbs. chili powder
    or
    2 tsp. chipotle powder
    or
    2 chipotles with adobo sauce, chopped
    or
    2-4 fresh jalapeños, minced, seeds and veins too

    Brown ground beef in a 5-6 quart Dutch oven. Add next 6 ingredients and bring to a boil.(Add any additional heat options at this time too) Reduce heat and simmer 10 minutes to mix flavors.
    Add rice, stir to mix, bring to a boil, reduce heat, cover and cook on medium heat for 25-30 minutes, or until rice is tender. (Do not remove cover during cooking time)Add corn and stir. Let sit 5 minutes to heat corn up.
    Serves 6
