    List of Ingredients




    1lb lean ground beef
    2 med onions, chopped
    3 garlic cloves, minced (I used less and used the jarred garlic)
    28oz reduced sodium meatless spaghetti sauce (I used 2 jars of my favorite sauce)
    28oz diced tomatoes, undrained (15 oz can)
    12oz tomato paste (didn't have)
    3/4c water
    2t minced fresh parsley (used dried)
    1T Worcestershire sauce (omitted)
    2t dried basil
    1 1/2t dried oregano, divided
    1lb uncooked medium tube pasta (used manicotti noodles)
    15oz reduced fat ricotta cheese
    2c (8oz) shredded part skim mozzarella cheese
    1/2c grated parmesan cheese, divided
    1/2c egg substitute (used 1 egg)
    1/2t salt
    1/2t pepper

    Recipe



    In a large saucepan, cook beef, onions and garlic over medium heat until meat is no longer pink. Stir in spaghetti sauce, tomatoes, paste, water, parsley, Worcestershire, basil and 1t oregano. Cover and simmer for 3 hours, stirring occasionally. (I simmered it for 1 hour.) Cook pasta according to pkg directions; drain. Combine ricotta, mozzarella, 1/4c parmesan, egg substitute, salt and pepper.

    In 2 greased 13x9 pans coated with nonstick cooking spray, spread 1c meat sauce. In each dish, layer ¼ of pasta, 1c meat sauce, and ¼ of cheese mixture. Repeat layers. Top with remaining sauce. Sprinkle with remaining Parmesan cheese and oregano. Cover and bake at 350 for 1 hour or until heated through. Yield: 2 casseroles, 16 servings each. (I used one larger flat casserole and had my chilled casserole in the oven 2-1/4 hours)
