    List of Ingredients




    2 tablespoons olive oil
    1 clove garlic, crushed
    1 onion, diced
    1 large tomato, cubed
    1 cup kalamata olives, pitted and chopped
    1/3 cup sliced pepperoni sausage, cut into strips
    1/2 cup sliced fresh mushrooms
    2 tablespoons capers, drained
    salt and pepper to taste
    1 pound pasta
    1 cup smoked mozzarella cheese, cubed

    Recipe



    1. In a large skillet heat the olive oil over medium high heat. Add the garlic and onion and saute until translucent.

    2. Add the tomato, olives, pepperoni, mushrooms, capers and salt and pepper to taste and simmer until heated through.

    3. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    4. Add warm sauce to pasta and sprinkle with mozzarella cheese; mix well and serve immediately.



    Here's what I changed when I made it:
    --2 cloves garlic
    --seed the tomato before chopping
    -1 6-ox. box fresh sliced mushrooms (instead of 1/2 cup mushrooms)
    --probably about 10 ounces pasta (I don't think the sauce stretches to fit 16 oz. of pasta)
    --4-6 ounces smoked mozzarella, cut in small cubes (I don't think the 1 cup/4 ounces of mozz. specified would cover a whole pound of pasta.
    --The recipe doesn't specify, but that would feed 4. If you want to use a whole 1-pound box of pasta, I would double or at least 1 1/2 the sauce.

    Boy is this a good combination, if you like these ingredients, as we do!
