    1 1/2 Tb. cornstarch
    1/4 - 1/3 c. brown sugar
    1/2 c. water
    4 c. sweetened sliced peeled peaches
    1 Tb. butter
    1 Tb. lemon juice

    Batter Topping
    1 Tb. granulated sugar
    Spiced Honeyed Cream

    Recipe



    Mix cornstarch, sugar and water. Add peaches and cook until
    mixture is thickened, about 15 minutes. Add butter and lemon juice. Pour into an 8" round baking dish.

    Drop spoonfuls of Batter Topping on top of hot peach mixture. Sprinkle with sugar. Bake in hot oven (400ºF.) 40 - 50 minutes. Serve warm, in bowls, with Spiced Honeyed Cream. (recipe follows) Makes 6 servings

    Batter Topping

    1/2 c. sifted flour
    1/2 c. sugar
    1/2 tsp. baking powder
    1/4 tsp. salt
    2 Tb. soft butter
    1 egg, slightly beaten

    Combine all ingredients and beat with spoon until batter is smooth.

    Drop by spoonfuls on hot peach mixture, spreading evenly. It spreads over peaches during baking.

    Bake as directed in Fresh Peach Cobbler.

    Spiced Honeyed Cream:
    Beat 1 c. heavy cream until thick. Add 2 Tb. honey and 1/2 tsp. cinnamon. Beat to mix. Makes 1 2/3 cups
