    Posted by: luckEme ************This is a recipe that is often requested by family and friends. I have made it for years but I don't know where I originally got the recipe. It's easy to fix with simple ingredients. To me, the crust makes the difference. If you like pineapple, try this one!

    List of Ingredients




    CRUST:
    1 stick oleo-melted
    1/2 cup brown sugar-packed firmly
    1 tsp. vanilla
    1 cup flour
    1/2 tsp. baking soda
    1 cup uncooked oatmeal

    FILLING:
    1 - 20 oz can crushed pineapple
    1 cup sugar
    2 1/2 Tbsp. flour
    2 eggs-slightly beaten
    2 Tbsp. oleo
    1 tsp vanilla

    Recipe



    CRUST: In a bowl combine melted stick oleo with brown sugar and vanilla. Stir well. In another bowl mix flour, soda, and oatmeal. Stir this into oleo/brown sugar/vanilla mixture. Press 3/4 of this mixture into a 8" pie pan. Reserve the 1/4 of mixture for topping.

    FILLING: Combine pineapple, sugar, flour, eggs and cook over medium heat in saucepan until it thickens. Remove from heat. Add 2 Tbsp oleo and vanilla. Pour into pie crust and crumble reserved crust mixture on top.
    Bake 20 to 25 minutes at 350 degrees.
