    3 to 3-1/2 cups all purpose flour
    1 package rapid rise yeast (regular yeast does not work well with this recipe)
    3/4 tsp salt
    1 cup very warm water (125°-130°)
    2 TBS olive oil
    cornmeal for dusting

    Recipe



    In a large glass or metal bowl, combine 2 cups of the flour, dry yeast and salt. Stir to combine. Add warm water and olive oil to the flour mixture. Stir in enough remaining flour to make a soft dough. Turn out onto a floured counter and knead dough until very smooth and elastic, usually about 4-6 minutes. Shape into a round ball and cover with the same bowl you mixed the ingredients in. Let rest for at least 10 minutes.

    Now you can use the entire ball of dough for one large pizza or 2 smaller ones. My guys like thick crust so I make one large one.

    Lightly oil pizza stone or pan and dust with cornmeal. Roll dough to fit pan(s). I usually just use my fingers to stretch the dough. I also lightly oil the top of the dough and sprinkle it with Penzeys Pizza Seasoning (excellent stuff by the way).

    Add your toppings and bake. I bake mine at 450° but the recipe says 400°. Bake for around 20 minutes or until golden brown and bubbly.

    This is one of those recipes were you will just have trial and error. It took me years to finally get it where we like it.

    **FLAVORED DOUGH**

    GARLIC & HERB
    Add 2 tsp dried basil, oregano or rosemary and one clove finely minced garlic to dry ingredients.

    CORNMEAL DOUGH
    Replace 1/2 cup flour with 1/2 cup cornmeal. Add to dry ingredients.

    CHEESE DOUGH
    Add 1/2 cup grated parmesan cheese with the dry ingredients.

    WHOLE WHEAT DOUGH
    Replace 1 cup white flour with 1 cup whole wheat flour. Add to dry ingredients.
