It's easy and all you need is a salad to complete the meal.The cookbook was from the 1940'S and the recipe was called Spanish Pork Chops, It's been a family favorite all these years. I leave off the celery and mushrooms because most of the family doesn't eat them. The only difference is that once it's put together I cover and bake at 350 for one hour.

    List of Ingredients




    4 thick pork chops (about 1 inch)
    1 tablespoon oil
    4 large slices onion
    4 large rings of green bell pepper
    4 tablespoons uncooked rice
    3 cups stewed tomatoes
    1 cup finely diced celery
    1 cup thinly sliced mushrooms
    Salt and pepper to taste

    Recipe



    Brown chops in oil over medium low heat until well browned on both sides, about 15 minutes. Remove from pan and drain off all fat. Return chops to pan. Place a slice of onion on each, then place a pepper ring on the onion. Put 1 tablespoon of rice in the center of each pepper ring. Pour tomatoes around the chops. Sprinkle celery and mushrooms over the top. Sprinkle with salt and pepper to taste. Cover and simmer 1 hour, or until chops are very tender. VARIATION: I sometimes add a pineapple ring under the onion slices.
