    List of Ingredients




    4 medium potatoes, peeled and cubed
    1 small onion, thinly sliced
    1 teaspoon sugar
    4 tablespoons butter, divided
    1/2 cup milk (I used a little more)
    1/2 teaspoon salt
    1/8 teaspoon pepper (I used 1/4 teaspoon)
    Minced fresh parsley, optional (I used chopped fresh chives)

    Recipe



    Place potatoes in a saucepan and cover with water; bring to a boil. Cook until very tender, about 20-25 minutes. Meanwhile, in a skillet over low heat, cook onion and sugar in 2 tablespoons butter until golden (and slightly caramelized… my addition here), stirring frequently. Drain and mash the potatoes. Add remaining butter, milk, salt and pepper. Stir in the onion mixture. Garnish with parsley if desired. Yields 6 servings
