    1 lb. frozen crinkle cut french fries
    3/4 lb. Italian sausage links, casing removed
    2 tsp. olive oil
    2 garlic cloves, chopped
    1/4 tsp. crushed red pepper flakes
    1 pint cherry, halved or grape tomatoes
    3 cups fresh spinach, coarsely chopped
    4 to 8 oz. Mozzarella or Fontina cheese, cut into 1/4" cubes
    1/2 cup freshly grated Romano Cheese

    Preheat oven to 425ºF. Place french fries on a large baking sheet.
    In a large non-stick skillet, cook sausage over medium-high heat 5 minutes or until browned, breaking up sausage with side of spoon. Discard fat. Add olive oil, garlic and crushed red pepper to sausage in skillet. Reduce heat to medium, and cook 2 minutes or until garlic is golden. Sprinkle over french fries. Top sausage with spinach, then cherry or grape tomatoes and finally cubed cheese. Sprinkle with Romano and bake for 20 minutes or until fries are crispy and cheese is melted. Serves 4-5.
