I was lazy and didn't feel like washing another pot, so I microwaved the red potatoes, and then when done, smashed them and carried on with the recipe. So good my husband was moaning at the table, and immediately looking for 2nds. The oven method made them very crisp on the bottom, almost like a hash brown, only better. Is that even possible?

    List of Ingredients




    You get some baby red potatoes and boil them until they are soft. You then place them on a baking sheet and squish them flat, about 1/2-inch thick. Sprinkle on some salt and pepper, and pour olive oil over them fairly liberally. Bake them at 425 degrees until they are crispy, about half an hour or so.

    They are unbelievably good. Of course, it helps to use high quality olive oil, freshly ground pepper, and crunchy coarse sea salt. Given the season, very simple but good. I also used red potatoes and smashed them with the side of a meat mallet while hot. They stuck a little bit. It might be better to use cool potatoes.
