    1tsp. unsalted butter
    4c. heavy cream, or more as needed
    2tsp. salt
    1tsp. freshly ground black pepper
    3-3 1/4lbs. Idaho potatoes, peeled and cut into 1/4" slices
    8oz. Swiss cheese, grated

    Recipe



    Preheat oven to 400º. Lightly grease a 2qt. baking dish with butter. Bring the cream to a simmer in a large saucepan over med.-high heat. Add salt and pepper and stir well. Add the potatoes, adding more cream as necessary to completely cover them. Lower the heat to med.-low and simmer til barely fork-tender, 10-12 min. Remove from heat. With a large spoon, transfer 1/3 of the potatoes, with some of the cream, to the prepared dish, making an even layer. Top with 1/3 of the cheese. Continue layering in this order. Finish with cheese. Place dish on a baking sheet and roast til golden brown and bubbly, about 30 min. Remove from oven and let sit 5 min
