    Microwave Scalloped Potatoes

    List of Ingredients




    3Tbsp butter 3Tbsp flour
    1 and one half cups milk
    3/4 tsp salt
    1/4 cup-1/2 cup grated Parmesan cheese
    2-3 potatoes peeled and sliced as thin as possible

    Recipe



    It is important to use a very large glass bowl so mixture does not boil over Spray bowl with Pam or butter lightly
    Melt 3 TBSP butter on high 30-40 sec then whisk in flour
    Stir in milk and salt
    ( Sometimes I heat the milk in a large pyrex bowl first as it speeds up the thickening )
    Microwave uncovered for 3-5 minutes on High until boiling and thickened Stir in Parmesan cheese (a whisk works well)

    Fold in thin potato slices and microwave on high 18-30 minutes
    (Check doneness of potatoes stirring occ. after 18 minutes then every 5 or so minutes as microwaves vary greatly)

    You can serve as is or set oven to Broil and brown top Optional- Top with 3/4 cups Colby or cheddar cheese and Broil until bubbly
    I decorate with a little Rosemary or dried dill weed (optional) I have not made oven scalloped potatoes in years since I found this! Cleanup is much simpler.

    You can double sauce or add an extra potato depending on preference Just be sure the bowl is Large enough to prevent boilover.

    Microwave can make great Rice Pudding also I found!
