2 - 3.5oz pkg instant french vanilla pudding
3 cups skim milk
2 tsp almond extract
12 oz Cool Whip
Gingersnaps (I used store brand in a box)
Fresh Blueberries - 4-5 cups
Recipe
Combine instant pudding and milk, whisk until thoroughly blended. Whisk in almond extract and cool whip.
In large glass bowl with straight sides: spread 1/2 cup pudding over bottom of bowl. Top with single layer of ginger snaps. Spread with 1/3 of remaining pudding. Sprinkle with 1 1/2 - 2 cups blueberries. Place single layer of gingersnaps over berries. Repeat pudding, berry and gingersnap layer. Top with remaining pudding. Garnish with blueberries. Cover and let set overnight in refrigerator.
I think this would be good with raspberries as well.
