    Fran's Favorite Irish Nilla Banana Pudding Square Pie With Meringue Topping

    1 cup granulated white sugar
    1/2 cup all-purpose flour
    1/2 teaspoon salt
    4 large egg yolks
    2 cups milk
    1 teaspoon vanilla extract
    1 T butter or margarine
    12 oz. box Nabisco Nilla wafers
    4-5 medium thinly sliced bananas

    Recipe



    Cook sugar, flour, salt, egg yolks and milk until thick, stirring constantly, to prevent scorching and to keep mixture smooth. Reduce heat and stir in vanilla extract and butter, until melted. Spread 1/3 of the cooked pudding mixture on the bottom of a 1 1/2-2 quart casserole or a 9" X 9" square baking dish. Then cover with a layer of Nilla wafers, and then cover with a layer of sliced bananas. Repeat this procedure, ending with the custard layer.

    Meringue Topping:

    4 large egg whites
    1/2 cup granulated white sugar
    1/4 teaspoon cream of tartar
    1/2 teaspoon vanilla extract

    Beat the egg whites until stiff with the sugar-1 Tablespoon at a time, until stiff peaks form, along with the cream of tartar and vanilla extract. Cover the pudding completely with the meringue topping. Bake at 375F for 12 to 15 minutes or until lightly browned on top-check your oven often, to make sure that the meringue does not scorch or burn-if you have a hot or un-even oven temperature.

    Serves 6-8

    This is our family's favorite version of baked banana pudding, in the form of a square pie-topped with sweetened meringue on top.
