    List of Ingredients




    (very good and simple)

    3 beaten eggs
    1 1/2 cups sugar (white gran.)
    1/2 cup melted butter
    4 tsps. lemon juice
    1 tsp. vanilla
    1 3 1/2 oz. can flaked (I use Angel Flake) coconut (1 1/4 cup equiv.) {try not to substitute with the bagged coconut} - You can use frozen also
    1 unbaked 9 in. pastry shell.

    Recipe



    Combine eggs, sugar, butter, lemon juice and vanilla. Stir in Coconut. Pour filling into pie shell. Bake at 350 degree (preheated) oven for 40 to 50 min. or until filling is set.
    This can also be made into tarts for a dessert tray, just adjust your baking time
