    Creamy Pumpkin Mousse
    Mr. Food

    10 servings

    1 can (16 ounces) solid-pack pure pumpkin
    1 package (6-serving size) instant sugar-free vanilla pudding mix
    1/4 cup low-fat (1%) milk
    1 teaspoon ground cinnamon
    2 cups frozen light whipped topping, thawed

    In a medium bowl, with an electric beater on medium speed, beat the pumpkin, pudding mix, milk, and cinnamon until well blended.
    Fold in the whipped topping until thoroughly blended, then spoon into a serving bowl. Cover loosely and chill until ready to serve.

    FROSTING IN THE PIE

    1 9" graham cracker crust
    8 oz. softened cream cheese
    1 tub Coconut & Pecan Frosting
    8 oz. Cool Whip

    Recipe



    Beat cream cheese until smoot, add frosting, beat, then add Cool Whip. Pour into pie shell and refrigerate.
    Note: I drizzled caramel toping over the top and sprinkled with toasted chopped pecans.

    first made the pumpkin mousse and refrigerated overnight. I tasted it in the morning and it just didn't taste sweet enough to me to eat alone so the wheels started turning...LOL

    In the morning I decided to make the frosting in the pie. As I was mixing it in my Kitchen Aid, I thought "what the heck, let me throw in this pumpkin mousse". I used the whole thing. I let it mix and poured it into a ready made 9" graham cracker pie crust. I refrigerated it and before serving lightly poured some melted caramel syrup and toasted pecans on top.

    When my mom came over she wanted to k now where I bought the pie as it looked SO good! And I kid you not, this is one of the BEST pies I have ever eaten. This will now take the place of traditional pumpkin pie on our holiday table!

    This is a MUST try if you like pumpkin
