    List of Ingredients




    2 cups warmed milk
    1/2 cup potato flakes
    1 tablespoon salt
    1/2 cup sugar
    2 eggs
    1/2 cup oil
    4 to 5 cups flour
    2 packages dry yeast (2 tablespoons bulk yeast)
    3/4 cup warm water
    1 teaspoon sugar

    Dissolve yeast into warm water and sugar. Set aside. Dissolve potato flakes in warmed milk and put in blender with other ingredients except flour and yeast mixture. Blend well, then measure four cups of flour into a large bowl. Add blended ingredients to the bowl and mix, then add yeast mixture and last cup of flour. Add additional flour if the dough is too sticky.
    Cover and let rise until double in size. Shape into small balls (about the size of an English Walnut or a golf ball), and place balls on greased pan. A cookie sheet works well. Brush balls with oil and let rise again.
    Preheat oven to 400 degrees. Once the balls have again doubled in size, make indentions in the center and fill with filling of choice. Top with streusel and bake 11-12 minutes. Brush the kolaches (the dough portion) with a mixture of 1 tablespoon sugar and 3 tablespoons hot water. Let cool completely on wire rack.

    Cream Cheese Filling
    8 ounces cream cheese
    1/2 to 3/4 cup sugar
    1 egg yolk
    Mix together thoroughly until smooth, then use or refrigerate. Let it come to room temperature before using.

    Streusel Topping
    1/2 cup flour
    1/4 cup butter or margarine
    1/2 cup sugar
    1/2 cup finely chopped coconut ( optional )
    Using a pastry blender, combine first three ingredients until crumbly, then add coconut. Spoon topping over kolache before baking.
