    Posted by: cjintexas**************This is my mother's recipe and it is our favorite because you don't have to knead the dough. In fact, the less you handle the dough, the lighter the rolls. This is the easiest (and best) recipe I've found. They are delicious.

    List of Ingredients




    1 cup shortening (Crisco)
    3/4 cup sugar
    1 cup boiling water
    2 cakes of fresh yeast or 2 envelopes of dry yeast
    1 cup milk
    2 eggs, well beaten
    2 teaspoons salt
    6 cups unsifted flour

    Recipe



    In a large bowl, cream shortening and sugar. Add boiling water, stir and allow to cool. Dissolve yeast in milk.* When sugar mixture is cool, stir in yeast mixture and beaten eggs. Sift flour and add to sugar mixture and beat well. Cover bowl and refrigerate overnight.

    Punch dough down and roll out. Cut with a biscuit cutter and fold in half to make Parker House rolls. Place on lightly greased cookie sheets. The rolls may be brushed with melted butter before baking. (They may be frozen at this point).

    Let rise until doubled, about 1-3 hours. Bake at 375 degrees for 15 minutes or until brown. Yields 3 dozen.

    *If using dry yeast, slightly heat milk before adding dry yeast. You may take 1-2 teaspoons out of the 3/4 cup sugar and use in the heated milk to help activate the yeast. Wait for bubbles to form on top of the milk mixture before adding to recipe.
