    Pillow Soft Rolls (Kaiser Rolls)

    List of Ingredients

    3 3/4 to 4 1/2 c. all purpose flour
    1/2 c. sugar
    2 pkgs. (1/4 oz. each)active dry yeast
    1 1/4 t. salt
    1/2 c. water
    2 eggs
    1 T. buter or margarine, melted
    1 c. of sour cream

    Recipe

    In mixing bowl, combine 1 1/4 c. flour, sugar, yeast and salt.
    In saucepan, heat sour cream and water to 120- 130 degrees.
    Add dry ingred. beat until blended.
    Beat in eggs til smooth.
    Stir in enough remaining flour to form soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 min.
    Place in a greased bowl , turning once to grease top. cover and refrig. overnight.

    Punch dough down. turn onto lightly floured surface; roll out to 1/2 in. thickness. cut w/ floured 2 1/2 in. biscuit cutter. using dull edge of table knife, make an off center crease so the small half is on top; press along folded edge.
    Place in a greased 15in. x 10 in. x 1 in. baking pan, allowing edges to touch. cover and let rise in warm place until doubled, about 25 min. brush tops w/ butter.
    bake @ 375 for 12-15 min. or til golden brown. yield: 2 dz.
    Notes: I just divided my dough with my bread scraper into about 20 rolls. I wanted them to be the size of those Keiser sandwich rolls.
