    Recipe Introduction

Posted by: jgfan *********Here is a good recipe for a light and tender buttermilk roll.

    List of Ingredients

    4 to 4-1/2 cups flour
    2 packages yeast
    3 Tablespoons sugar
    1 teaspoon salt
    1/2 teaspoon baking soda
    1-1/4 cups buttermilk
    1/2 cup water
    1/2 cup shortening

    Recipe

Combine 1-1/2 cups flour, yeast, sugar salt and soda, mix well. In saucepan heat together buttermilk, water and shortening to 120 to 130 degrees, shortening does not need to melt. Add to flour mixture and blend on low to moisten then beat on medium for 3 minutes.
By hand stir in enough flour to make a firm dough. Turn out and knead til smooth, 5 to 8 minutes, add flour as needed. Place in a greased bowl and turn over to grease top. Cover and let rise til doubled, about 20 minutes. Punch down and divide into 24 equal pieces. Shape each into a smooth ball. Place in a greased 10"x15" pan. Cover and let rise til almost doubled, about 20 minutes. Bake at 400 degrees 15 to 20 minutes til golden brown. Remove from pan.
