    List of Ingredients




    20-ounce can crushed pineapple
    6-ounce package lemon Jell-O
    3 cups boiling water
    8 ounces cream cheese
    16 ounces Cool Whip
    3/4 cup sugar
    3 tablespoons lemon juice
    3 tablespoons water
    2 tablespoons flour
    2 egg yolks, lightly beaten

    Drain pineapple, reserving juice. Dissolve gelatin in boiling water; add pineapple. Pour into 9x13 dish. Chill until almost set. Beat cheese and Cool Whip until smooth. Spread over gelatin; chill for 30 minutes. Meanwhile, in non-reactive saucepan over medium heat, combine sugar, lemon juice, water, flour, egg yolks and reserved pineapple juice; bring to a boil, stirring constantly. Cook 1 minute or until thickened. Cool. Spread over cheese layer. Chill for at least 1 hour. 12-16 servings.
    I liked it, flavor combination of pineapple and lemon pie. It’s what I think of as a Midwestern salad: sweet and gooey, almost dessertish. I made half a recipe in 8x8 Pyrex dish
