    List of Ingredients




    1/2 head each red and green cabbage, shredded
    1/4 c. red onion, sliced very thin
    1 carrot, peeled and shredded

    Dressing:
    2 egg yolks
    1 1/2 t. Colman's mustard powder
    1/4 c. sugar
    1 T. flour
    pinch of cayenne
    1 t. coarse salt
    1/2 c. cider vinegar
    1/2 c. heavy cream
    1 T. poppy seeds
    1 T. finely grated horseradish

    Recipe



    Combine the cabbage, onion and carrot in a large bowl and refrigerate.

    In top of dbl. boiler off heat, combine yolks with mustard, sugar, flour, cayene and salt. Whisk in vinegar slowly to ensure no lumps. Place over simmering water and cook, stirring, 30 seconds. Stir in cream and continue cooking over simmering water until thick, 2-3 min, stirring constantly. Cool and add poppy seeds and horseradish. Using about half the dressing, dress cabbage. Add more if desired. Makes 6 servings
