Gaudrey's Bacon and Egg Salad Sandwiches

List of Ingredients
8 boiled eggs, peeled and grated or finely chopped
4 strips of bacon cooked very crisp and finely cumbled
1/3 cup mayonnaise
1/8 teaspoon black pepper
1/4 teaspoon prepared mustard
1 tablespoon dill pickle vinegar
2 teaspoons grated onion
1 cup finely shredded cheddar cheese
Recipe
Combine all ingredients, adding more mayonnaise if needed to make spreading consistency. Remove crusts from bread if desired and spread with the mixture. If desired, you may serve these cut in strips open-face style, as regular closed sandwiches, as wraps, or in croissants. It's even good on crackers.
I wasn't to sure about this one yesterday when I made it. I thought the grated onion overpowered everything. I had some of the leftovers with my lunch today. Put it on those new crackers with the sides. I really liked it. I'd say this one is better the second day so the flavors can meld. Thanks Gaudrey for another of your recipes
