    Easy Creamy Onion Soup

    4 Tablespoons butter
    2 pounds onions, thinly sliced
    4 cups vegetable or chicken stock
    3 cups whipping cream
    salt and white pepper

    Melt butter in a large saucepan over low heat. Add onions, cover, and cook until translucent--stirring occasionally--for about 30 minutes. Add the stock and bring to a boil. Reduce heat and simmer for 15 minutes. Add cream and bring to a boil. Reduce heat and simmer to thicken slightly--about 15 minutes. Season generously with salt and pepper. Ladle into bowls.

    Creamy Onion Soup

    2 potatoes, (small) diced
    3 cups potato water
    1 tablespoon vegetable oil
    3 1/2 cups chopped onions
    1/3 cup dry white wine
    6 ounces cream cheese, at room temperature, cubed
    1 cup milk
    1 teaspoon salt
    1/4 teaspoon black pepper
    2 tablespoons butter
    croutons
    cheddar cheese

    Boil potatoes in water or vegetable stock until soft. Reserve
    liquid. Saute onions in butter and oil on low heat for 10 minutes.
    Add wine and simmer for 5 minutes. In a blender, puree the cream
    cheese, sauteed onion and cooked potatoes with a cup or two of
    liquid in which the potatoes were cooked. Pour the puree into a
    soup pot and stir in the rest of the potato liquid, the cup of
    milk, salt and pepper. Heat carefully, stirring occasionally.
    Garnish with parsley, croutons or grated cheese.

    Cream of Onion Soup

    3 medium yellow onions -- sliced
    2 tablespoons butter or margarine
    4 cups chicken broth
    1 dash pepper
    1 dash dried thyme
    1/4 teaspoon salt -- optional
    2 cups milk -- divided
    1/3 cup all-purpose flour

    In a 3-qt. saucepan over medium heat, saute onions in butter. Add broth, pepper, thyme and salt if desired; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add 1 2/3 cups milk. Stir flour into remaining milk until smooth; add to soup. Bring to a boil; boil and stir for 2 minutes or until thickened.


    Any one of these would be great to cook a roast in or simmer some browned chicken breasts or pork chops in. Not to mention just sitting down to eat a bowl of over some croutons.
