    List of Ingredients




    1 lb Chicken, cooked and shredded (i just used canned, but you can do it however)
    1 T. butter or vegetable oil
    1/2 cup diced onion
    1 clove garlic, pressed
    4 cups chicken broth (herbed or plain)
    1 cup masa harina (either with the mexican foods or flour...it's the flour you use to make tortillas)
    3 cups water
    1 cup enchilada sauce
    16 oz Velveeta
    1 tsp. salt
    1 tsp. chili powder
    1/2 tsp. cumin

    Recipe



    Saute garlic and onion in butter until onion is translucent(2 min). Add chicken broth. In a seperate bowl, combine masa harina and 2 cups of the water. Whisk until blended, then add to the pot with everything else. Add remaining water, enchilada sauce, cheese and spices to pot and bring to a boil. Add chicken. Reduce heat and simmer soup for 30-40 minutes or until thick. Garnish with shredded cheddar cheese, crumbled tortilla chips and pico de gallo.
