    This delicious soup is topped with shredded Gouda cheese.

    1/2 stick butter
    1 1/2 lbs russet potatoes,peeled and diced
    1 1/2 lbs cauliflower, trimmed and cut into flowerets
    1 lb carrots, peeled and sliced
    1 large sweet onion, chopped
    2 -4 cloves garlic, minced
    4-6 cups chicken broth or may use vegetable broth
    salt and pepper to taste

    12 oz shredded Gouda cheese
    chopped parsley

    Recipe



    Melt butter in large soup pot. Add potatoes, cauliflower, carrots, and onions and saute 7 minutes or until golden brown. Add garlic and saute a few more minutes. Add broth, bring to a boil and simmer for 30-45 minutes until veggies are tender. Season to taste with salt and pepper. Ladle into soup bowls and top with parsley and cheese.
