    Posted by: Mrs_Lucci_N_FL************I normally double the soup for a crowd... I normally cook down the bacon, onion and garlic - then toss everything in a crockpot for about 4-5 hours on high -- or more on low.

    List of Ingredients




    10 bacon strips, diced
    1 medium onion, diced
    2 garlic cloves, minced
    1 can (14 1/2 ounces) stewed tomatoes --- I usually just use the diced tomatoes
    2 cans (15 ounces each) pork and beans
    2 cans (14 1/2 ounces each) beef broth

    Recipe



    In a saucepan, cook bacon until crisp. Set bacon aside; drain, reserving 1-2 tablespoons drippings. In the drippings, saute the onion and garlic until tender. Meanwhile in blender or food processor, process tomatoes until smooth (not if using diced tomatoes). Add to the onion mixture. Stir in pork and beans and broth. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through. Stir in bacon.

    Serves 6.

    Variations... I've tossed in leftover roast beef sraps and it was good... I've also tossed in a bit of keilbasa -- which was real good too. It's fine all by itself -- but add ons are fun too!

    We like this hearty soup with a grilled cheese sandwich or a good hearty hot dog.
