    List of Ingredients




    1/2 cup chopped carrot (1 medium)
    1/4 cup chopped onion
    1/4 cup chopped celery
    1 Tbsp butter
    1 28 oz can diced tomatoes, undrained
    1 5 1/2 oz can vegetable juice (2/3 cup)
    2 tsp sugar
    1/2 tsp dried Italian seasoning, crushed
    1/4 tsp salt
    1/8 tsp ground black pepper
    1 to 1 1/4 cp water
    Crisp cheese puffs or corn chips

    In a medium saucepan, cook carrot, onion and celery in hot butter over medium heat for 5 to 8 minutes oruntil tender.
    Add tomatoes, vegetable juice, sugar, Italian seasoning, salt and pepper. Bring to boiling, reduce heat.
    Simmer, uncovered for 10 minutes. Remove from heat.
    Cool slightly. In a blender or food processor, place half of the tomato mixture. Cover and blend until smooth. Repeat with remaining
    tomato mixture. Return all of the soup to the saucepan. Add enough water to reach desired consistency. Heat through. If desired, top each serving with cheese
    puffs. Makes 4 servings
