    3 large potatoes, cut into sm. cubes
    1 1/2 cups onions, finely chopped
    2 cups milk, it's better if it's whole milk (of course)
    3 Tablespoons flour
    1 stick margarine, plus about 2 T.
    8 oz. Velveeta cheese
    4 ozs. Sour Cream

    Cook potatoes in water to cover (add a little chicken bouillon for flavor) until soft. Drain. In a skillet, melt the 2 T. margarine and saute the onions and celery until tender.

    Combine 1 stick margarine with the flour in a Dutch oven and slowly add the milk. Stir and cook until hot. Add the Velveeta cheese (cut into small chunks) and cook the mixture until thickened.

    Add the potatoes and use a fork to mash some. Add the sour cream and some salt and pepper to taste. You might want to add a little more milk, especially if you rehead.

    When I take this to someone, I take cornbread muffins with it.
