    3 Tbsp. melted butter
    1 medium onion, cut into chunks
    6 oz. tomato paste
    4 cups chicken broth
    1 fresh tomato, diced
    Salt
    Sour Cream
    Shredded Swiss cheese

    Recipe



    Combine butter, onion and tomato paste in blender or food processor. process until smooth. Transfer to a medium saucepan and bring to a boil over high heat, stirring constantly.
    Stir in chicken broth and diced tomato. Heat through. Season to taste with salt.

    Spoon into bowls and top with a spoonful of sour cream and a sprinkling of Swiss cheese.
    (Don't skip the sour cream or Swiss cheese, it really makes this soup special. It was a favorite soup at the restaurant I managed.)
