    List of Ingredients




    1 2 ½-3 lb. Chicken cut-up and skin removed
    1 small bag of baby carrots
    1 medium onion, diced
    Garlic to taste

    Combine all the above in a large pot and cover with water by 2 inches. Bring to a rapid boil; lower heat to a simmer and cook until chicken is falling off of the bone. Strain and reserve broth. Tear pieces of chicken into small pieces and set aside.

    In 4 cups of reserved broth; boil 1 ½ lbs. peeled potatoes until tender. Remove from heat and mash the potatoes in the broth. Add the following:

    2 cans of green chilies
    1 large can of creamed corn
    2 10 oz. can of Rotel tomatoes, crushed
    2-4 Tbl. minced cilantro
    1 ½ cups of half and half

    Add enough of reserved chicken broth to thin to desired thickness. Simmer on lower heat for 15-20 minutes.

    Add cut up chicken and top with cheddar cheese, monterey cheese, and fried tortilla strips.

    I always add extra potatoes to mine, because I like a thicker soup--kind of like a chowder. I love this soup!!
