    This is a great dish, because the oven does the cooking, and there are no dirty dishes in the sink.



    List of Ingredients




    2 cups tomato juice
    2 tablespoons sugar
    3 tablespoons tapioca (quick cooking)
    2 teaspoons salt (I only put in 1 teaspoon)
    1 pound beef stew meat
    1 onion, chunks
    4 carrots, chunks
    1 stalk celery, can take out before serving
    4 potatoes, chunks

    Recipe



    (Do this first so it has time to combine before you start with prepairing the vegetables and meat).
    Combine tomato juice, sugar, tapioca, and salt in bowl.

    Take a jelly roll pan and a big sheet of heavy aluminum foil so you can seal top and sides with foil.

    Combine meat(do not brown) and vegetables on foil. Top with tomato mixture, seal with heavy aluminum foil(seal making a little tent on top so the foil is not touching the food) and bake about 4 hours at 250 degrees. Serves 4 (I have baked this at 300 degrees for about 3 - 3 1/2 hours but I would not turn oven up higher. This is a slow cook recipe. You have a nice tomato gravy sauce which we really like. Enjoy!!!

    Serve with fruit salad and rolls.
