    2 packages Brownberry's sage or herb croutons
    1 # bulk pork sausage (Ex. Jimmy Deans Sage or plain bulk pork sausage)
    chopped onion 3/4 cup
    chopped celery stalks and leaves 1 1/2 cup
    package of extra chicken giblets
    1 small can of chicken broth
    2 eggs
    a few dashes of sage seasoning or crushed sage seasoning
    a few dashes of poultry seasoning
    salt and pepper to taste
    1 cup melted butter
    chopped fresh parsley

    Recipe



    Day before boil extra giblets with some diced onions until tender. When done , chop up in electric chopper. Save giblets in a separate container. Save all the juice/broth from cooking the giblets to use in the stuffing later on. Chop the onion , celery and parsley and save in a separate container.

    When ready to make the stuffing, put the croutons in a very large bowl. In a fry pan, fry the celery, onion and pork sausage together. When done ,add this mixture to the croutons. Add the extra cooked chicken giblets , eggs, melted butter ,parsley, and the extra seasonings to the croutons. Add the can of chicken broth, salt and pepper to taste. Add the giblet broth a little at a time until the stuffing is not dry . Mix well in the large bowl with your clean hands.

    Add extra seasonings to taste. Including salt and pepper.

    Can substitute pork sausage fat for part of the butter.

    (2 packages of croutons makes enough to stuff the turkey and have a casserole on the side with the extra stuffing)
