    WHIPPING EVAPORATED MILK

    Place 1 c of evaporated milk in a small mixer bowl(not plastic) and place it, uncovered, in the freezer for 30 minutes, or till ice crystals begin to form around the bowl's edges.

    Chill the beaters in the freezer as well. (BAMIX WORKS BEST.)


    Working quickly, whip the milk with a mixer on high speed for 1 minute, gradually adding 1/4 to 1/2 cup sugar and 1 t vanilla.


    To extend the whipped cream's stability for 30 minutes: Sprinkle 1 tsp. gelatin over 2 T. water in small, microwave-safe bowl; let stand 2 minutes. Microwave on HIGH for 40 seconds; stir. Let stand additional 2 minutes, or until dissolved. Combine with evaporated milk before chilling.
