    Posted by: bagelbaker_OH***********I've made these more times than I can count. They are sooo good! Addictive. Ghee is very simple to make and you can make it ahead of time, keep in fridge until you are ready to make the green beans

    List of Ingredients




    1 1/2 lbs fresh whole green beans
    1/4 cup butter oil *ghee(see below)
    1/4 cup flaked coconut
    1/2 cup lite coconut milk
    1/4 of a large onion (prefer sweet)
    1 tsp ground coriander
    1/2 tsp turmeric
    1/2 tsp ground ginger
    1 1/2 tsp salt

    Recipe



    *Butter Oil: (also known as ghee)
    simmer,uncovered, on very low heat, 1 lb unsalted butter (approx 20 min) or until you can see the milk solids seperate from oil. Strain thru cheesecloth or just skim off the milk solids. This oil is rich! You can store extra in a closed container in frige for a few months.
    (I tried this recipe with regular butter instead of ghee and it definately lost something...it MUST have the ghee! I sometimes use salted butter to make ghee and that is ok)

    to make the bean recipe:

    Place oil, cut up onion, turmeric, coriander, & ginger in a large skillet on medium heat until onion is well coated. Add beans, the coconut milk and salt. Toss and cover. cook on medium heat until beans are to your liking. (20 min?) (I like them a little crisp but the Indian way is very soft)

    I can just eat a plateful of these for supper, skipping the rest of the meal!
