    List of Ingredients




    2 good sized zucchini
    whole wheat flour
    salt
    paprika
    cayenne pepper
    1 qt. Mexican stew tomatoes

    Recipe



    Slice zucchini about 1/4" thick. Put flour and seasonings into a plastic bag. Put zucchini in bag and shake well. Heat about 1/4" olive oil in a large skillet. Cook zucchini slices in hot oil until they begin to brown a bit. Removed to a paper towel lined tray as they brown. When all are browned drain the oil from the skillet. Put zucchini back into the skillet. Add the Mexican stewed tomatoes. Simmer for about 10 minutes.

    I needed to use the zucchini and wanted something different. This turned out very good. Next time I think I'll add a bit of cumin and chili powder. Not to much of either though as they might overpower the dish.
