    List of Ingredients


    • 1 lb. ground chuck
    • 1 small red onion, chopped
    • 4 ounce can diced green chiles
    • 12 (6 inch) corn tortillas, cut into 1 inch pieces
    • 10 3/4 ounce can cream of mushroom soup
    • 2 1/4 ounce can sliced ripe black olives
    • 1 c. mild enchilada sauce
    • 1/2 c. sour cream
    • 8 ounces shredded sharp Cheddar cheese, divided
    • TOPPINGS: shredded lettuce, diced tomato, chopped onion, jalapeno peppers


    Instructions


    1. Preheat oven to 400 degrees
    2. Cook ground chuck, onion and green chiles in large skillet over medium-high heat, stirring until beef crumbles and is no longer pink. Drain well.
    3. Place beef mixture in a large bowl. Stir in tortilla pieces, cream of mushroom soup, black olives, enchilada sauce and 1 cup cheddar cheese.
    4. Spoon mixture into a lightly greased 11 x 7 inch baking dish. Sprinkle evenly with remaining 1 cup cheese.
    5. Bake at 400 degrees 20 to 25 minutes or until bubbly.
    6. Serve with desired toppings.
