    Recipe Introduction

    Gumbo is customarily ladeled over a mound of hot cooked rice in a soup plate or bowl. Rice can be served on the side, spooning it into the gumbo as you eat. The rice doesn't get as mushy that way.

    List of Ingredients

    1/2 cup all-purpose flour
    1/2 cup vegetable oil
    2 large onions, chopped
    1 large green bell pepper, chopped
    1/2 cup celery, finely chopped
    4 cloves garlic, minced
    4 cups chicken stock or water
    1 10 oz can rotel with green chili peppers
    1/2 teaspoon dried thyme, crushed
    1 bay leaf
    1/4 teaspoon salt
    1/4 teaspoon pepper
    2 cups cooked chicken or turkey, chopped
    1 10 oz package frozen sliced okra
    or
    1 cup fresh okra, cut 1" thick
    cooked rice

    Recipe

    1. Stir together flour and cooking oil till smooth in a large dutch oven. Cook over medium-high heat 5 minutes. Reduce heat to medium. Cook and stir 15 minutes more or till mixture is a dark reddish brown.

    2. Add onions, green pepper, celery and garlic. Cook and stir till tender.

    3. Add Broth or water, undrained tomatoes, thyme, bay leaf, salt and pepper. Add chicken or turkey and okra. Bring to boiling; reduce heat.

    4. Simmer Gumbo, covered, 45 minutes. Serve with hot cooked rice.
