    1 pkg. (2 layer) yellow cake mix
    1 pkg. (7 oz. ) coconut, divided
    1 c. strawberry jam
    1 tub (8 oz) whipped topping
    sliced fresh strawberries

    Recipe



    Heat oven to 350. Spray 2 round cake pans with veg. oil spray. Prepare cake mix according to directions on the bake of the box, gently stirring in 1 cup of coconut before pouring into pans. Bake according to the directions on the cake mix box. Cool 10 minutes; remove from pans. Cool completely on wire racks.

    Place one cake layer on a serving plate; spread with half of the strawberry jam. Spread 3/4 of a cop whippped topping over the jam; top with the second layer. Spread top of cake with rest of strawberry jam. Frost top and sides with remaining whipped topping. Cover the top and sides with rest of coconut.

    Refrigerate until ready to serve. Garnish with fresh strawberries before serving.

    Makes 12 servings
