    1 pkg. (2 layer) lemon cake mix
    3/4 c. butter; softened
    1 egg
    1 cup yellow cornmeal
    2 tablespoons finely shredded lemon peel

    Recipe



    Preheat oven to 375 degrees. In a large mixing bowl, beat butter and egg with an electric mixer on medium speed for 30 seconds. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel. (If you want your cookies to be a bright yellow, add a few drops of yellow food coloring)

    Roll dough into 1" balls. Roll in granulated sugar. Place on an ungreased cookie sheet about 2 inches apart. Bake 9 to 10 minutes until lightly browned on the bottom. Let cool on cookie sheet for 1 minute so they don't fall apart when you take them off. Cool.
