    1 egg
    2 cups of baking mix, such as Bisquick
    3/4 c. apple; peeled and finely chopped
    1/3 c. sugar
    2/3 c. milk
    2 tablespoons oil
    2 teaspoons cinnamon

    Recipe



    Preheat oven to 400. Grease bottom only of 12 muffin cups. Beat egg slightly, stir in remaining ingredients until just moistened. Divide batter evenly among cups. Bake until golden brown, 15 to 17 minutes.
