    2 cups baking mix
    2/3 cup whole milk
    1/4 cup sugar
    1 large egg
    1 tsp ground cinnamon
    1 tsp vanilla extract
    1 pound frozen unsweetened peaches, thawed and diced
    Topping:
    1/2 cup baking mix
    1/2 cup packed dark brown sugar
    1/2 cup pecan pieces
    3 tbsp cold unsalted butter, diced

    Preheat oven to 375°. Coat a nonstsick 9-inch square baking pan with cooking spray.

    For coffeecake, place 2 cups baking mix in medium bowl; break up lumps with spoon. Add milk, 1/4 cup sugar, egg, cinnamon and vanilla. Stir until well blended. Add peaches; stir until just blended. Pour batter into pan, set aside.

    For topping, in a small bowl, combine 1/2 cup baking mix and brown sugar. Stir until well blended. Add pecans and butter; toss gently (do not break up small pieces of butter). Sprinkle evenly over batter. Bake 35 minutes or until wooden pick inserted in center comes out clean. Let stand 15 minutes or cool completely.
