    1 4-4-1/2 pound Whole Roasting Chicken.

    Spice Rub:
    Salt
    Black Pepper
    Onion Powder
    Garlic Powder
    Red Pepper

    Olive Oil
    1 12 ounce can beer

    Clean out the bird if you have gizzards.

    Mix up your spice rub. I never measure anything, but it basically a 1 to 1 to 1 ratio, the same amount of everything except the red pepper (unless you like it HOT)

    Coat the bird inside and out with a drizzle of olive oil

    Spread the spice rub inside the cavity and on the outside. Apply a good amount.

    Drink 1/4 of the beer. Consume more cans if necessary. With a bottle opener punch 2 holes in the top of the beer can behind the opening.

    Spoon 2 tablespoons of the spice rub into the beer, it will foam out a little.

    Preheat your grill to 350 degrees.

    Sit the bird onto the beer can, placing the beer can into the bird cavity.

    Put the bird onto the roasting pan and cook over INDIRECT HEAT at 350 for 1 1/4 to 1 1/2 hours.

    Turn the bird 1/2 turn at around 45 minutes.

    Pull the bird off when the meat thermometer reads 155 degrees in the breast and thigh regardless of cooking time.
