    Cheesy Hamburger Potato Soup

    This is the best potato soup!

    List of Ingredients

    1 lb hamburger
    1 medium onion, chopped
    2 tablespoons butter or margarine
    2 to 3 celery stalks, chopped or diced
    3 to 4 carrots, chopped or diced
    6 medium potatoes, peeled and cubed
    4-5 cups water
    2 cups milk
    1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
    1 tsp salt
    1/2 teaspoon garlic salt
    1/8 teaspoon pepper
    16 ounces process American cheese (Velveeta), cubed

    Recipe

    In a large saucepan or soup kettle, brown hamburger. Drain and set aside. In same pan, sauté onion in butter. Add the celery and soften slightly. Add potatoes, carrots, water and salt. I add just enough water to cover everything. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes are tender. Stir in the hamburger, milk, soup, garlic salt and pepper, heat through. Add cheese; stir until cheese is melted. Yield: 10 servings (2-1/2 quarts).
