    Orange-Marshmallow Yams

    Cookbook author Marlene Sorosky on the back of Safeway marshmallows.


    Recipe Introduction


    Creamy melted marshmallows in the potato mixture as well as on the top make this dish exceptionally light and fluffy.


    List of Ingredients


    • 2 cans (29ozeach) yams, drained
    • 1/3 cup frozen orange juice concentrate, thawed
    • 1/2 cup paked golden brown sugar
    • 1 teaspoon pumpkin pie spice
    • 1 teaspoon salt
    • 8 Safeway marshmallows, cut into quarters
    • 1/2 cup chopped pecans
    • 25 whole Safeway marshmallows


    Instructions


    1. In a large bowl, mash yams.
    2. Stir in orange juice concentrate, brown sugar,pumpkin pie spice, salt, and cut-up marshmallows.
    3. Put into a 9 x 13-inch baking dish.
    4. Smooth the top.
    5. Cover with Foil. (May be refrigerated overnight if desired.)
    6. Bake at 400 degrees F for 20 to 30 minutes or until hot.
    7. Remove foil and sprinkle with nuts.
    8. Top with whole marshmallows.
    9. Bake uncovered for 10 minutes or until marshmallows are melted and golden.
    10. Makes 8 Servings
