    1 ½ cups egg whites (12 eggs)
    1 ½ cups sifted powdered sugar
    1 cup sifted cake flour
    ¼ tsp. salt
    1 ½ tsp cream of tartar
    1 cup sugar
    1 cup sugar
    1 tsp vanilla

    Recipe



    Let the egg whites site in a bowl until they reach 60 degrees (about an hour).
    Sift the powdered sugar and measure out 1 ½ cups. Sift the cake flour and then measure out 1 cup.
    Sift together the powdered sugar, cake flour and salt 3 times.
    Beat the egg whites until frothy. Add the cream of tartar, beat on medium speed until it forms soft peaks. Add the sugar gradually and beat until it is just thickened and forms droopy peaks. Add the vanilla and beat it in.
    Sprinkle ¼ cup of the sifted ingredients over egg whites and fold in gently. Add the rest 1/3 at a time.
    Bake in ungreased angel food pan at 350 degrees for 40-45 minutes. It is done when toothpick comes out clean. Invert immediately on top of a glass bottle until it is cooled.
