Nina's Famous Chili Beans
Source of Recipe
original recipe from the Modesto Bee (much changed over the years)
Recipe Introduction
I like to tell the story that my friend Ramiro's hispanic sisters never liked me until they tasted my chili beans. Although I'm still not sure if they like me, they love my chili beans.
List of Ingredients
2 large cans pinto beans
2 cans of black beans
2 cans of kidney beans
2 cans of white beans
2 large cans of chopped tomatoes
2 cans diced green chilies
1 lb ground round
1 lb of chicken breasts on bone with skin
1 package of linguisa
1 large red onion
4 t minced garlic
chili powder to taste
cumin to taste
mexican oregano to taste
salt & pepper to taste
4 bullion cubes (2 chicken, 2 beef)
sliced jalapenos (from jar) to taste or just juice for flavor
Recipe
Open cans of beans, diced green chilies, & chopped tomatoes and put in large crock pot or split between 2 crock pots. (I have to make a spicy batch and a sissy batch for Amy!) Turn pots on high. Steam chicken breasts & shred. Brown ground round and linguisa and drain fat. Add chicken & meats to pots. Chop onion and add to pots with garlic. Add bullion cubes, spices, and jalapenos to taste.
When ingredients come to slow boil in crock pot(s), reduce heat to low. I start my beans late at night and let them cook all night long. Approx 8 -10 hrs. They're great with chopped green onions, shredded sharp cheddar cheese, or sour cream. Or all of the above!
