Jack's Garlicky Potatoes

My dear friend Linda's wonderful husband, Jack cooked this on a visit down south. I loved the taste & the simplicity.
List of Ingredients
6-8 red potatoes
1 T butter
1 T olive oil
4-5 t minced garlic
1 large red onion
S&P to taste
Recipe
Preheat oven to 475 degrees. Cut potatoes into 6ths. Cut onion into chunks. Heat oil & butter in casserole. When sizzling, add garlic, potatoes, & onions and coat with oil mixture. Salt & peper to taste. Bake for 15-20 minutes, stir, and cook 10-15 minutes more. Yummy!
